Salami
We sell three varieties of salami year-round— Saucisson Sec, Finocchiona, and Sopressata. In addition, we sometimes make seasonal flavors too.
Whole Coppa
Coppa is pork shoulder that has been salted, spiced, and dried. Slice thin for charcuterie boards or sandwiches.
Guanciale
Guanciale is whole, cured pork jowl. It is known for its flavorful role in pasta all'amatriciana and spaghetti alla carbonara. Sauté for a rich base or topping for soups, beans, pasta, and vegetables.
Pancetta
Pancetta is cured pork belly. It adds depth and flavor to soups, beans, vegetables, and pasta, both as a base and as a crispy topping. Our pancetta is cured and then frozen.
Sausage
We sell frozen sausage in a variety of flavors - Maple Breakfast, Veneto, Toulouse, Bratwurst, and Spicy Italian.
